MARSHMALLOW BROWNIE INGREDIENTS

  • Box Brownie Mix:  Flour, sugar, and leavening – all built in. It delivers the perfect brownie flavor, with room to add ingredients that take it to the next level. This is the base of your brownies and the key to getting that perfect fudgy texture.
  • Melted Butter: Melted butter adds richness and moisture that makes the brownies soft and tender. It also helps intensify the chocolate flavor and gives the brownies that slightly glossy, chewy edge we all love. I love using salted butter for these marshmallow brownies.
  • Egg + Egg Yolk: Eggs provide structure and help the brownies hold together, while the extra yolk adds even more richness and moisture. This combination is what gives these brownies that chewy-yet-dense texture that keeps them from being cakey or dry!
  • Water: Water helps bring the batter together, ensuring it’s smooth and spreadable. It also slightly loosens the mix so the brownies bake evenly without being too thick and dense.
  • Chocolate Chips: Chocolate chips add little pockets of melty chocolate throughout the brownies. They create extra texture and flavor in every bite, making the brownies taste even more indulgent and chocolate perfection.
  • Mini Marshmallows: Mini marshmallows create a melty, gooey topping that balances the rich, fudgy brownies underneath.
  • Butter: Room temperature butter is needed for the base of our brownie frosting recipe!
  • Powdered Sugar: Sweetens the frosting while giving it a smooth, creamy texture without any grit.
  • Cocoa Powder: Adds rich chocolate flavor and deepens the color of the brownie frosting.
  • Vanilla Extract: Enhances the chocolate flavor and adds warmth and depth to the frosting.
  • Salt: Balances the sweetness and intensifies the overall chocolate flavor.
  • Heavy Whipping Cream or Milk: Helps thin the frosting to a spreadable consistency while making it extra smooth and creamy.

TIPS FOR FUDGY MARSHMALLOW BROWNIES

  1. Let Them Cool! Allow the brownies to cool completely before frosting. This helps the brownies set properly and ensures the frosting stays smooth instead of melting into the center.
  2. Yolk It Up. Swap 2 whole eggs for 1 egg + 1 yolk. That extra yolk = rich, gooey, fudgy magic.
  3. Stir, Don’t Whip. Mix until everything’s just combined. Overmixing sneaks in too much air and gives you cake-y brownies (and we’re not here for that).
  4. Chocolate on Chocolate. Fold in chocolate chips for melty pockets of goodness.
  5. Toothpick Trick. Bake until a toothpick comes out with a few gooey crumbs, not completely clean, but also no liquid batter – that’s when you know they’re just right.
  6. Parchment Lifesaver. Line your pan with parchment and leave a little overhang, so you can lift the whole slab out without any mess.

Description

These chocolate frosted marshmallow brownies are rich, fudgy, and topped with gooey marshmallows and a smooth chocolate brownie frosting. Made with a box mix, they’re easy to make and perfect for sharing.

Ingredients

Units Scale

For the Marshmallow Brownie Layer:

  • 1 Box Brownie Mix (see notes)
  • 1/2 cup Salted Butter (melted)
  • 1 Egg
  • 1 Egg Yolk
  • 1/4 cup Water
  • 1 cup Chocolate Chips
  • 2 cups Mini Marshmallows

For the Chocolate Brownie Frosting:

  • 1/2 cup Unsalted Butter (room temperature)
  • 1/2 cup Cocoa Powder
  • 2 cups Powdered Sugar
  • 1/4 Teaspoon Salt
  • 1/4 cup Heavy Whipping Cream or Milk

Instructions

For the Marshmallow Brownie Layer:

  1. Preheat & Prep: Start by preheating the oven to 350°F. Prepare a parchment lined 8×8 inch square pan with baking spray or a homemade pan release. Let the parchment hang over the edges—instant handles
  2. Melt Butter: In a microwave-safe bowl, microwave the butter at 15-30 second intervals until completely melted. Set aside.
  3. Combine the Ingredients: In a large mixing bowl, add the brownie mix, egg, egg yolk, melted butter, and water. Stir until the batter is almost combined—don’t over-mix!

  4. Chocolate Chips: Add the chocolate chips to the brownie batter and gently fold them in with a spatula until evenly distributed.

  5. Bake: Bake for 40-45 minutes, or until a toothpick inserted into the center comes out mostly clean with just a few moist crumbs. We don’t want a completely clean toothpick, we want these fudgy!

  6. Marshmallow Layer: Turn off the oven and pull the brownies out. Spread the mini marshmallows evenly over the top, then place the pan back in the oven for 5–7 minutes until the marshmallows are soft and puffed – not browned
  7. Cool Down: Don’t skip the cooling time! These brownies finish setting as they cool and must be completely cooled before adding the brownie frosting.

For the Brownie Frosting:

  1. Whip the Butter: Start by mixing the butter on medium-high for 30 seconds-1 minute, in a stand mixer or with an electric hand mixer

    .
  2. Vanilla & Salt: Add the vanilla extract and salt.
  3. Powdered Sugar: Add the powdered sugar and cocoa powder and start mixing.
  4. Start Heavy Cream: Add heavy cream and continue mixing until incorporated. Scrape the bowl
  5. Last Step: Mix on low-medium until all ingredients are incorporated, this could take a few minutes. At this point you should have perfectly smooth, chocolate frosting for your brownies!
  6. Spread Over Brownies: Spread the chocolate frosting evenly over the brownies and allow them to cool completely before slicing.

Notes

Brownie Mix: My favorite brownie mix is Duncan Hines-Dark Chocolate Fudge (18.2 oz).
